Preparation steps
1.
Rinse, zest and juice the lime.
2.
Combine the sugar, lime zest, lime juice and 200 ml (approximately 3/4 cup) of water in a saucepan. Bring to a boil and simmer for 3 minutes, Strain through a sieve and stir in the sparkling wine.
3.
Remove the seeds from the melon and scoop out the flesh. Roughly chop the melon and place in a blender or food processor. Blend the melon with the wine mixture until smooth.
4.
Place the puree in a metal bowl and freeze for about 4 hours, mixing with a fork every half hour.
5.
Scoop into chilled glasses and garnish with fresh melon slices.
