- 150 grams Watermelon
- 4 Tbsps White vinegar
- 80 milliliters Vegetable broth
- 6 Tbsps olive oil
- 1 Vanilla bean (seeds)
- salt
- freshly ground peppers
- sugar

Preparation steps

Rinse and quarter the tomatoes. Remove the seeds and finely dice. Finely dice the watermelon.

Mix the vinegar, broth, oil, and vanilla. Season the mixture with salt, pepper, and a pinch of sugar. Mix in the tomato and watermelon, then adjust the seasoning. Set aside and let infuse for 20 minutes. Transfer to a bowl and serve.
