This light summer appetizer has a delicious crunch and is surprisingly satiating thanks to the addition of yogurt.
This salad makes a great side next to grilled poultry or steak.

- 1 small Cucumber
- 18 ozs Watermelon
- 9 ozs Yogurt (0.1% fat)
- 1 lemon (juiced)
- salt
- freshly ground peppers
- sugar
- to garnish
- 4 mint

Preparation steps

Rinse the cucumber. Cut lengthwise into eight pieces, then dice into 1/2 inch cubes. Remove the fruit of the melon from the shell, remove the seeds, and cut into bite-sized pieces. Mix the cucumber with the melon and divide into four 7 ounce glasses.

Mix the yogurt with the lemon juice and season to taste with salt, pepper, and sugar. Top the cucumber mixture with the yogurt sauce, and garnish with a sprig of mint.
