This light summer appetizer has a delicious crunch and is surprisingly satiating thanks to the addition of yogurt.

This salad makes a great side next to grilled poultry or steak.

Preparation steps

1.

Rinse the cucumber. Cut lengthwise into eight pieces, then dice into 1/2 inch cubes. Remove the fruit of the melon from the shell, remove the seeds, and cut into bite-sized pieces. Mix the cucumber with the melon and divide into four 7 ounce glasses.

2.

Mix the yogurt with the lemon juice and season to taste with salt, pepper, and sugar. Top the cucumber mixture with the yogurt sauce, and garnish with a sprig of mint.

I simply love cucumber and watermelon! Could I add a little more cucumber than watermelon? Would it kill the balanced taste of the dessert?

This recipe is very flexible, so feel free to add more cucumber!
