- 700 grams onions
- 3 Tbsps butter
- 2 Tbsps sugar
- salt
- freshly ground peppers
- 1 jar dried Tomatoes (in oil, about 200 grams)
- 2 Tbsps Caper
- 800 milliliters Beef broth
- 300 milliliters Dark beer (or malt beer)
- 2 garlic cloves
- 1 tsp lemon juice
- cilantro

Preparation steps

Drain tomatoes, collecting 2 tablespoons of oil. Cut tomatoes into small cubes. Drain capers and chop finely. Peel onions and cut into thin rings. Heat oil and butter in a saucepan and saute onions for about 10-15 minutes until soft and remove from pan. Add remaining oil, sugar, salt and pepper to the pan and caramelize until light brown, stirring. Add capers and tomatoes and caramelize, return onions to the pan.

Add broth and beer to the pan and bring to a boil. Reduce heat and simmer for 15 minutes. Peel garlic and squeeze it into the soup, season with lemon juice, salt and pepper.

Pour soup into bowls and garnish with cilantro. Serve immediately.
