- 3 cups Bread flour (plus extra for dusting)
- ¼ oz active dry yeast
- ½ tsp salt
- ⅞ cup warm water
- 1 Tbsp olive oil (plus extra for brushing)
- 4 ozs black Olives (pitted, chopped)
- ½ cup chopped Hazelnuts

Preparation steps
1.
Put the flour, salt and yeast into a mixing bowl and stir to combine. Make a well in the centre. Stir in the water and oil and mix to a soft dough.

Turn the dough out onto a lightly floured surface and knead for 10 minutes until smooth. place in a greased bowl, cover with oiled cling film and leave to rise in a warm place for 1 hour until doubled in size.

Knead the dough lightly on a floured surface, flatten out and sprinkle over the olives and nuts. Knead to distribute the olives and nuts and leave to rest for 5 minutes.

Shape into an oval loaf and place on a greased baking tray. Make 2-3 deep cuts in the top. Cover as before and leave to rise in a warm place for 45 minutes until well risen.

Heat the oven to 200°C (180° fan).

Brush the loaf with oil and bake for 30-35 minutes until golden and sounding hollow when tapped on the base. Place on a wire rack to cool.
7.
Serve sliced, garnished with rosemary and olives.
