1 stale White roll
1 carrot
80 grams Pancetta (in slices)
2 onions
1 garlic clove
1 Tbsp butter
2 Tbsps finely chopped parsley
800 grams mixed Ground meat
2 eggs
60 grams breadcrumbs
30 grams green Olives (pitted)
salt
freshly ground peppers
1 tsp thyme
1 Tbsp medium hot Mustard
vegetable oil (for the pan and for brushing)

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). Soak the bread in lukewarm water. Peel and finely grate the carrot. Cut two slices of bacon into 3 cm long pieces (approximately 1 inch) and dice the rest. Peel and finely chop the onions and garlic.

Fry the onions and garlic in the butter with the chopped bacon. Add the carrots briefly, then remove from heat and let cool slightly. Mix with the soaked bread, ground meat, parsley, eggs and breadcrumbs. Cut the olives into small pieces and mix in. Season with salt, pepper, thyme and mustard.

3.

Knead the dough into a homogenous mass and season to taste. Put into a rectangular pan or loaf pan that is oiled. Distribute the remaining baconon the surface, sprinkle with a little oil and cook 1-1.5 hours in the preheated oven.
