500 grams mixed Ground meat
1 kaiser roll (from the day before)
1 onion
1 garlic clove
1 small Zucchini
1 red Bell pepper
2 carrots
1 egg
2 sprigs thyme
salt
peppers
3 Tbsps clarified butter
4 large waxy potatoes
300 grams Crème fraiche
1 bunch Chives

Preparation steps

Wash potatoes well and firmly wrap in aluminum foil. Bake in oven at 175°C (approximately 350°F).

Soak bread in lukewarm water. Peel onion and garlic and finely chop. Rinse pepper, halve, remove core and finely dice. Rinse zucchini and carrots, cut off ends and finely dice.

Squeeze bread and mix with egg, mince and half-diced vegetables. Season with lettuce, pepper and thyme leaves. Form dough into 8 patties.

Heat clarified butter in a pan, add remaining diced vegetables and patties and fry on each side for about 7 minutes.

Rinse chives and cut into small rings. Stir chives into creme fraiche and season with salt and pepper to taste.

Wrap potatoes in foil, cut across top and serve with meatballs and chive dip.
