Meat Skewers with Mango Sauce

- 400 grams Veal cutlet
- 250 grams Pork belly (in thicker slices)
- ½ bunch Basil
- 4 Tbsps vegetable oil
- salt
- freshly ground peppers
- 12 Skewers
- Mango chutney
- 1 ripe Mango
- 1 pc fresh ginger
- 2 red chili peppers
- 4 Tbsps White vinegar
- 3 Tbsps sugar
Preparation steps
Cut veal cutlet and pork belly into strips about 3 cm (approximately 1 inch) wide and 6 cm (approximately 2 inches) long, fold alternately stuck on skewers, season with salt and pepper, then place in a shallow dish.
Rinse the basil, shake dry and pluck the leaves, chop half of them. Mix the chopped basil leaves with the oil and pour over the sticks, letting rest about 20 min. Grill the meat kebabs on a hot grill on all sides about 6-8 minutes.
Heat the remaining basil oil with the leaves in a pan and fry them.
Put meat kebabs on plates, top with fried basil with oil and serve with mango chutney.
Peel mangoes thin, loosen the flesh from the core and cut into approximately 1/2 cm (approximately 1/4 inch) cubes.
Peel the ginger and chop or grind finely. Rinse chiles, cut in half, remove seeds and finely chop. Combine mango pieces with chopped chile, vinegar, ginger, sugar and about 50 ml (approximately 1/4 cup) of water in a pot and let simmer over low heat for 8 minutes. Cover and continue to simmer for 10 minutes, Allow to cool.
