4 medium sized potatoes (peeled)
300 grams finely chopped Kale
60 grams butter
5 Tbsps chopped scallions
7 Tbsps warm milk
ground peppers
1 Tbsp chopped parsley (for garnish)

Preparation steps

1.

Cut the potatoes into quarters and cook until tender in boiling water, a good 15 minutes.

2.

Drain, mash with a fork until dry and fluffy.

3.

Boil the kale for 10 minutes in water, remove with slotted spoon, drain. Melt butter in a large pot, add kale and scallions and cook until scallions are translucent.

4.

Stir into the mashed potatoes. Add warm milk until the consistency is creamy.

5.

Season with pepper and garnish with chopped parsley.
