1 kilogram potatoes
250 milliliters milk (or cream)
80 grams butter
salt
freshly ground peppers
4 thick ham (raw, fat removed)
Nutmeg
70 grams butter
1 Tbsp scallions

Preparation steps

1.

Peel, rinse and chop potatoes. Cook potatoes in salted boiling water for about 20 minutes. Drain well and press potatoes through a potato ricer.

Heat milk (or cream) with 80 grams (approximately 3 ounces) butter. Whisk into potatoes. Continue whisking until potatoes are creamy. Season with salt, pepper and nutmeg.

Cut 2-3 star shapes from the ham slices. Finely chop remaining ham scraps. 

4.

In a pan, heat 2 tablespoons butter. Add ham stars and cook briefly on both sides. Remove and keep warm. Add chopped ham and cook in remaining 2 tablespoons butter.

5.

Divide mashed potatoes among plates, and top with ham stars, a little butter and diced ham. Garnish with chives.
