- 700 grams potatoes
- salt
- freshly ground pepper
- Nutmeg
- 100 grams Pastry flour
- 1 Tbsp Potato starch
- 1 egg
- 1 Tbsp softened butter
- 4 Tbsps Whipped cream
- Butterfat (for frying)

Preparation steps
1.
Peel the potatoes and boil in salted water for about 20 minutes. Drain well, cool slightly and press through a potato ricer. Mix the flour, potato starch, egg, butter and heavy cream into the riced potatoes. Season with salt, pepper and nutmeg.

Transfer the potato mixture to a floured surface and shape into a roll. Slice the roll into 1.5 cm (approximately 1/2 inch) thick slices and press lightly to flatten.
3.
Heat a bit of clarified butter in a large pan and cook for 3-4 minutes on each side, until golden brown. Serve with sour cream, roasted onion chutney, or your choice of topping.
