- 4 Swordfish fillet (each 160 grams of the upper shell)
- 1 bunch cilantro
- Limes (zest and juice)
- 2 chili peppers (chopped)
- 2 garlic cloves (chopped)
- 4 scallions
- 1 red Bell pepper
- 1 orange Bell pepper
- 1 Endive
- 2 Tbsps Chili sauce
- salt
- soy sauce
- 4 Tbsps vegetable oil
- freshly ground peppers

Preparation steps
1.
Coarsely chop the cilantro and mix with lime zest, chile and garlic, season with pepper and rub all over the swordfish. Cover and let marinate 20 minutes.

Rinse, trim and thinly slice the scallions.
3.
Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into thin strips. Separate the Belgian endive leaves and arrange into a star shape on 4 plates.

Heat 2 tablespoons of oil in a skillet and sauté the scallions and bell pepper until tender. Stir in the chili sauce, season with soy sauce and remove from the heat.
5.
Heat the remaining oil in a grill pan and saute the fish 1-2 minutes on each side, season with salt.
6.
Arrange the peppers on the Belgian endive leaves and place the fish on top. Serve immediately.
