4 Tbsps olive oil

1 Tbsp Dijon mustard
6 garlic cloves
2 Tbsps Fresh herbs (such as rosemary, sage, thyme and oregano)
1 Leg of lamb

Preparation steps

1.

Rinse the lamb and pat dry. 

2.

Melt the honey in a saucepan with the brandy, oil, lemon juice, and mustard. Peel the garlic and pass through a press into the pan. Add the herbs and stir until combined. 

3.

Rub this mixture over the lamb, wrap in aluminum foil, and refrigerate overnight. 

4.

The following day, preheat the oven to 220°C (approximately 430°F). Place the foil-wrapped lamb into the oven, and cook for 2 hours. Serve the lamb with potatoes, or caramelized vegetables.
