- 350 grams fresh fish fillets (such as halibut)
- 5 Limes (juice)
- 4 shallots
- 400 grams Tomatoes
- 1 Red paprika (120 grams)
- 2 green chili peppers
- 2 Avocados
- 20 fresh cilantro
- salt
- freshly ground peppers

Preparation steps

Rinse fish fillets, pat dry, and cut into large cubes. Transfer to a bowl and mix with the juice of four limes. Cover and refrigerate about 1 hour.

Peel and very finely chop shallots. Rinse and finely chop tomatoes. Rinse bell pepper and chile peppers, cut them in half, remove seeds and ribs, and finely chop. Halve avocado, remove pit, scoop out flesh, and cut into wedges. Drizzle avocado with remaining lime juice. Rinse cilantro and strip leaves from stems.

Mix fish with shallots, tomatoes, bell pepper, and chile peppers. Season with salt and freshly ground pepper. Divide ceviche among four small bowls. Alternatively, place ceviche in one large bowl and line edges with avocado wedges. Sprinkle with cilantro leaves and serve immediately.
