2 large Eggplant
2 cloves garlic cloves (finely chopped)
1 tsp paprika (noble sweet)
½ tsp Cumin (toasted in a dry frying pan)
1 cup semi-hard Cheese
cup olive oil
1 bunch Chives
salt
freshly ground peppers

Preparation steps

1.
Cut the aubergines lengthwise into slices approximately 1/4 inch thick. Sprinkle with salt and leave to stand.
2.
Blanch the chives very briefly in boiling, salted water, then refresh in iced water and drain.
3.
Mix the garlic with the spices and oil and put into a shallow dish.
4.
Grill the aubergine slices under a preheated grill for about 3 minutes each side, until golden brown. Then lay in the spiced oil and marinate in the refrigerator for at least 2 hours.
5.
Cut the cheese into rectangles and wrap in the aubergine slices. Tie with chives, season with salt and pepper and serve sprinkled with a little of the spiced oil.
