- 275 grams Pastry flour
- 2 ½ tsps Baking powder
- ½ tsp baking soda
- 60 grams chopped almonds (or hazelnuts)
- 1 egg
- 140 grams white sugar
- 125 grams butter
- 275 grams Buttermilk
- 2 Tbsps cocoa powder
- 3 Tbsps milk
- 1 tsp grated Lemon peel
- 3 Tbsps chopped almonds (to sprinkle)

Preparation steps
1.
Line the wells of a muffin tin with paper liners. Whisk egg, sugar, butter and buttermilk together. Stir flour, baking powder and baking soda together. Mix in almonds. Gently combine dry and wet ingredients. Divide batter between two bowls. Add cocoa and milk to one. Add lemon zest to the other.

Add 1 tablespoon of lemon batter to each paper liner. Top with 1 tablespoon of cocoa batter. Continue this pattern until all batter is used. Briefly stir each paper liner with a fork to achieve marbled look. Sprinkle with chopped almonds. Bake in a preheated oven at 180°C (approximately 350°F) for 20 to 25 minutes. Cool and serve.
