1 cup shredded, red Cabbage
1 cup carrots (julienned)
½ cup chopped Red onions
prepared coleslaw dressing (to taste)

For Fried Shrimp
vegetable oil (for frying)
6 cups shrimp (peeled and deveined)
salt

2 cups flour
2 eggs
¼ cup water
2 cups Cornmeal
To Assemble
4 white Bread roll (split)

For Coleslaw:

In a large bowl, combine the cabbages, carrots and onions. Pour the dressing over the mixture and toss to combine. Season with salt and pepper.

For Fried Shrimp:

Preheat oil in a Dutch oven to 375º F / 190º C. Season the shrimp with salt and pepper. Season the flour with salt and pepper. Whisk the egg and water together to create an egg wash. Working in batches, dredge the shrimp in the flour and then in the egg wash. Lastly, dredge the shrimp in the cornmeal. Drop the shrimp one at a time into the hot oil. Fry in batches until golden brown. Drain on paper towels.

Spoon coleslaw on the bottom half of each roll. Top with a generous portion of fried shrimp and cover with remaining roll. Serve.
