500 grams cooked Lobster meat
½ bunch cilantro
1 shallot
2 Tbsps Corn oil
2 Tbsps Lime juice
salt
freshly ground peppers
2 Grapefruit
cilantro (for garnish)
4 cooked, shelled Lobster claw (for garnish)

Preparation steps

Cut the lobster meat into small cubes. Rinse the cilantro, shake dry, pluck off the leaves and finely chop. Peel the shallot, finely chop and mix with the ciantro, oil and lobster meat and season with lime juice, salt and pepper.

Peel the grapefruit, making sure to remove the white pith, and section.

Place a 6 cm (approximately 2 1/4 inch) diameter ring mold on a plate, fill with the lobster mixture and remove the ring. Repeat with remaining lobster and serving plates. Arrange the grapefruit segments around the lobster and serve garnished with cilantro leaves and one lobster claw each.
