Lettuce Rolls with Beef and Rice
Peel the carrot and radish and cut into thin strips, about 6 cm (approximately 2 inches) long.
Season the beef with pepper and fry in very hot oil. Immediately remove from the pan and let cool. Cut into thin slices.
Blanch the carrot and radish sticks in boiling salted water for about 3 minutes. Rinse in cold water and drain well.
Lay 2 lettuce leaves next to one another to form a triangle. Spread a little wasabi paste on each. With moistened hands, form the sushi rice into 4 cones. Cut the lemon into thin slices.
Stuff the lettuce leaves with rice, beef and vegetable strips. Sprinkle with sesame seeds and lay the chives on top. Roll up the lettuce around the filling in a cone-like shape. Stick the edge of the lettuce leaf to secure with 3 rice grains. Garnish with a lemon slice and serve on small plates.
