Preparation steps

1.

Rinse the pepper, halve lengthwise, remove the seeds and white ribs and cut into bite-size pieces. Rinse the pepperoncini, remove the seeds and cut into thin rings. Blanch the tomatoes in a pot of boiling water, peel, core and cut into pieces. Peel the onion and garlic and finely chop.

2.

Heat the oil in a wide saute pan, add the onion, garlic and paprika and cook, stirring occasionally until the onion is translucent. Add the peppers, pepperoncini and tomatoes, season with salt and pepper and cook over high heat for about 3 minutes until some of the juice has evaporated. Slice the sausage. Stir the vinegar into the pan, reduce the temperature to low, add the sausage, cover and simmer about 20 minutes. Season with salt, pepper and sugar.

3.

If desired, serve fresh white bread.
