Ingredients

For the skewers
14 ozs Pork (boneless loin chops)
1 garlic clove
1 tsp ground Cumin
whole rosemary (to taste)
1 generous pinch cayenne pepper
1 Tbsp ground paprika (sweet)
peppers
½ lemon
6 Tbsps olive oil
salt
long Wooden skewer
olive oil for cooking (optional)
For the garnish
1 lemon

Preparation steps

For the skewers, cut pork into 3/4 inch thick strips or cubes.

To make marinade: Peel and chop garlic cloves. Place garlic in a bowl and mix with spices. Finely grate lemon zest and squeeze the juice. Stir both with garlic and spices. Stir in olive oil. Pour marinade over pork and mix well. Cover and marinate at least 2 hours.

Thread pork onto skewers. Just before cooking, season pork with a little salt. Place skewers on the grill and cook about 4 minutes per side. Alternatively, heat olive oil in a pan and cook skewers until golden-brown on all sides.

For the garnish, cut lemons in wedges and serve with the skewers.
