For the dip
½ red pepper (seeds removed; diced)
1 clove garlic cloves (minced)
2 fresh, red chili peppers (seeds removed; diced)
¾ cup water
¼ cup Red wine vinegar
2 Tbsps Lime juice
1 Tbsp sugar
For the shrimp dumplings
3 cups shrimp
1 egg yolk
1 Tbsp Corn starch
2 Tbsps Fish sauce
1 tsp sugar
1 tsp black Sesame seeds

8 stalks Lemongrass (or wooden skewers)

Preparation steps

Put the red pepper, garlic and chili into a small pan and add approximately 3/4 cup water, the red wine vinegar, lime juice and sugar. Bring to a boil and simmer gently without a lid for about 15 minutes.

Clean and finely chop the shrimp. Mix with the egg yolk, cornstarch, fish sauce, sugar, sesame seeds and pepper. Divide the shrimp mixture into 8 portions and shape into dumplings around the lemon grass or wooden skewers.

Grill or fry at a medium heat until golden brown. Serve with dipping sauce.
