- For the dip
- ½ red pepper (seeds removed; diced)
- 1 clove garlic cloves (minced)
- 2 fresh, red chili peppers (seeds removed; diced)
- ¾ cup water
- ¼ cup Red wine vinegar
- 2 Tbsps Lime juice
- 1 Tbsp sugar
- For the shrimp dumplings
- 3 cups shrimp
- 1 egg yolk
- 1 Tbsp Corn starch
- 2 Tbsps Fish sauce
- 1 tsp sugar
- 1 tsp black Sesame seeds

- 8 stalks Lemongrass (or wooden skewers)

Preparation steps
1.
Put the red pepper, garlic and chili into a small pan and add approximately 3/4 cup water, the red wine vinegar, lime juice and sugar. Bring to a boil and simmer gently without a lid for about 15 minutes.

Clean and finely chop the shrimp. Mix with the egg yolk, cornstarch, fish sauce, sugar, sesame seeds and pepper. Divide the shrimp mixture into 8 portions and shape into dumplings around the lemon grass or wooden skewers.
3.
Grill or fry at a medium heat until golden brown. Serve with dipping sauce.
