10 fresh lemons
3 cups Vodka
4 cups water

Preparation steps

Using a vegetable peeler, remove the peel from the lemons. Trim away any white pith from inside the lemon peels. Place the lemon peels in a large glass bottle or pitcher. Pour the vodka over the lemon peels; cover loosely. Let the vodka infuse for at least one week at room temperature.

After one week, mix up the simple syrup. Combine sugar and water in a saucepan; bring to a boil over medium-high heat. Boil for about 10 minutes; or until the sugar has dissolved. Cool to room temperature.

Stir infused vodka mixture into syrup. Strain the limoncello through a mesh strainer into glass bottles. Seal each bottle with a cork or stopper. Let mixture age one week at room temperature.

After one week, place bottled limoncello into the freezer. Serve icy cold.
