- 6 skinless Chicken legs (rinsed; divided into halves; excess fat removed)
- 1 ½ cups lemon pepper and garlic marinade
- salt (to taste)
- 2 tsps freshly ground Black pepper
- 6 cups peeled Sweet potato (cut into bite size pieces)
- 2 cups fresh Pineapple (cut into cubes)
- 3 large carrots (peeled; trimmed and sliced on the diagonal)
- 3 Tbsps good-quality olive oil

Preparation steps
1.
Pour the marinade, salt and pepper into a 1 gallon resealable plastic bag. Secure the seal and gently shake. Add the chicken, seal and gently squeeze and shake until the chicken is nicely coated with sauce. Chill in the refrigerator for at least 2 hours, turning once or twice.

Preheat the oven to 350º F / 180º C.

Place the sweet potatoes, pineapple and carrots in a roasting pan. Arrange the chicken on top and drizzle generously with the marinade sauce.

Roast for 30 to 40 minutes, or until the chicken is golden brown and cooked through.
5.
Divide among serving plates; season with salt and pepper to taste. Serve.
