1 small Leg of lamb (1.5 kg or approximately 3 pounds)
salt
peppers
2 Tbsps olive oil
250 milliliters dry Red wine
500 grams medium, waxy potatoes
125 grams shallots
3 garlic cloves
3 sprigs fresh rosemary

Preparation steps

1.

Trim fat from meat and rub with salt and pepper.

2.

Heat oil in a roasting pan and sear meat on all sides. Deglaze with wine, boil and cook in preheated oven at 180°C (approximately 350°F) for 1 hour while occassionally basting with gravy.

Peel, rinse and quarter potatoes. Peel shallots and cut in half. Peel garlic and coarsely chop. Rinse rosemary and shake dry.

4.

After lamb has cooked for 1 hour, surround with potatoes, shallots, garlic and rosemary. Sprinkle with salt and pepper and cook for an additional 45 minutes. Remove from oven and serve.
