- 1 Leg of lamb (About 1.2 kg)
- 8 garlic cloves
- 6 sprigs fresh thyme
- 1 handful fresh rosemary
- 6 small dried Piri piri peppers
- olive oil
- salt
- freshly ground peppers
- white balsamic vinegar
Preparation steps

Preheat the oven to 160°C (approximately 350°F).

Rinse leg of lamb and pat dry. Peel garlic and press with garlic press. Place garlic and 4 sprigs of thyme in a roasting pan. Add approximately 1/3 of rosemary sprigs to the roasting pan and drizzle with olive oil. Pluck remaining rosemary from stem, finely chop and mix in a bowl with 2 tablespoons oil and Piri Piri peppers. Rub lamb with piri piri pepper mixture.

Add lamb to the roasting pan and season with salt and pepper. Bake lamb in the preheated oven for about 3 hours. If necessary add a little water to the roasting pan. Before serving, sprinkle lamb with some white balsamic vinegar and serve while still hot.
