- 2 sticks Leeks
- 2 garlic cloves
- 1 chili pepper
- 50 grams dried Apricot
- 2 Tbsps olive oil
- Curry powder
- 100 milliliters Orange juice (freshly squeezed)
- 50 grams peeled Walnut
- salt
- freshly ground peppers

Preparation steps
1.
Halve the leeks lengthwise. Rinse, trim and cut into rings. Peel and finely chop the garlic and apricots.
2.
Sauté the leeks and garlic in some oil until colorless. Add 1 teaspoon of curry powder and pour in the vegetable broth. Add the chile pepper and apricots and simmer for 3-4 minutes over medium heat.
3.
Cut the walnuts into strips and add, along with the orange juice. Stir well and season with salt and pepper.
Serve dusted with a little curry powder.
