Shrimp Salad with Oranges, Spinach and Feta
Rinse the shrimp and pat dry. Cut the feta into cubes. Peel the oranges and cut into wedges. Squeeze the remaining pulp and collect the juice. Mix the juice with the olive oil and season with salt.
Rinse, trim and drain the spinach well. Pluck the oregano leaves and mix with the spinach, feta and half of the orange wedges. Divide salad between four glasses and place on plates.
Mix the shrimp with the remaining orange wedges and place on the plate next to the glass. Drizzle with the dressing and serve sprinkled with sea salt and coarsely ground coriander.
