1 onion (finely chopped)
2 cloves garlic cloves (finely chopped)
1 Tbsp butter
10 cups Frozen Spinach (defrosted and cut into wide strips)
cup cream
1.333 cups Gorgonzola (chopped)
½ cup Crème fraiche
1 cup carrots (finely grated)
Nutmeg
9 ozs Lasagne noodle
1 ½ cups grated Emmentaler cheese
Sage (to garnish)

Preparation steps

1.
Preheat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a baking dish with butter.
2.
Fry the onion and garlic in butter, add the spinach and fry for three more minutes. Add the cream and reduce slightly. Season with nutmeg.
3.
To make the cheese sauce, melt the Gorgonzola in a pot with the crème frâiche and season with salt and ground black pepper. Stir in the grated carrots.
4.
Alternately layer the lasagne sheets, cheese sauce and spinach in the prepared baking dish finishing with spinach. Sprinkle with the Emmental and bake for around 35 minutes. Serve garnished with sage leaves.
