Preparation steps

Grease the lamb-shaped mold very well with butter, sprinkle with breadcrumbs, close tightly, and shake so that breadcrumbs get distributed.

Beat the egg whites with salt until stiff.

Beat the butter with the sugar, add the egg yolks and orange zest, and beat until creamy. Add the flour and fold the egg whites into the yolk mixture carefully.

Pour the batter into the prepared mold and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for 30-40 minutes.

Remove from the oven and leave to cool for 15 minutes. Serve the lamb cookies dusted with icing sugar.
