500 grams Lamb loin (ready to cook, trimmed)
12 vigorous rosemary
1 organic lemon
150 milliliters Red wine
4 Tbsps olive oil
2 Tbsps honey
1 generous pinch Ground cinnamon
freshly ground peppers

Preparation steps

1.

Rinse the lamb, pat dry and cut into 12 finger-like strips (across the grain). Lay the rosemary sprigs flat on skewers and thread the lamb.

For the marinade, zest the lemon and squeeze the juice. Mix both with the red wine, the oil, the honey, cinnamon and pepper. Pour over the lamb skewers, mix, cover and marinate overnight in the refrigerator.

3.

About 30 minutes before grilling, take skewers from the marinade. Then cook on the hot grill with regular contact about 8 minutes. Baste regularly with the marinade. Just before serving, season with salt.

4.

serve to taste with tabbouleh.
