Preparation steps

1.

Rinse the arugula and spin dry. Rinse and halve the tomatoes. Peel the onion and cut into narrow wedges.

Rinse the meat, pat dry and season with salt and pepper. Heat 1 tablespoon of oil in a pan. Brown the meat on both sides over high heat for 4-5 minutes. Wrap in foil let rest for 4 minutes.

For the vinaigrette, mix the vinegar with the remaining oil, salt and pepper.

Toss the arugula with the tomatoes, onions and the vinaigrette and arrange on 4 plates. Cut the lamb into slices and serve over the salad.
