100 grams dried Apricot
400 grams boneless lamb (from the leg)
2 Tbsps vegetable oil
salt
freshly ground peppers
¼ tsp cinnamon
½ tsp ground Cumin
¼ l Beef broth
400 grams Long grain rice
½ tsp Turmeric
coarsely chopped parsley (to sprinkle)

Preparation steps

Cut the apricots into coarse pieces. Remove any  at, skin and tendons from the lamb and cut into cubes.  Heat 1 tablespoon of oil in a large skillet and working in batches, saute the lamb until brown all over. Sprinkle with cinnamon and cumin and season with salt and pepper. Pour in the broth, add the apricots and simmer about 20 minutes until the liquid is almost completely absorbed.

Cook the rice according to package directions until al dente. Heat the remaining oil in a skillet and briefly sauté the turmeric, Stir in the rice and saute about 5 minutes. Add the lamb and the apricots, gently mix and season with salt and pepper. Sprinkle with parsley and serve.
