500 grams lamb (from the shoulder)
3 onions
2 garlic cloves
olive oil
salt
freshly ground peppers
1 pinch ground allspice
1 pinch ground cinnamon
1 pinch ground Cumin
1 pinch ground Saffron
1 pinch Turmeric
1 pinch Curry powder
700 milliliters Beef broth (or more if needed)
120 grams fresh Spinach
250 grams Long grain rice
2 Tbsps chopped Fresh herbs (rosemary, thyme)

Preparation steps

1.

Rinse the meat, pat dry and cut into small cubes. Peel the onions and garlic and finely chop.

Heat 2 tablespoons of oil in a saucepan and brown the meat on all sides. Season with salt and pepper and remove from the pan. Sauté the onions and garlic in the drippings, add the spices and sauté briefly, return the meat to the pan and deglaze with the broth. Simmer about 40 minutes over medium heat.

Rinse the spinach, pick through, trim and spin dry.

Add the rice to the meat about 20 minutes before the end of cooking, stirring occasionally. Add a little broth, if necessary.

Finally, mix in the spinach and herbs, let stand briefly and season with salt and pepper. Serve immediately.
