Preparation steps

1.

Place 125 grams (approximately 4 ounces) of the ladyfingers in a freezer bag and crumble. Coarsely chop the chocolate and melt over a pan of hot water. Mix with the ladyfinger crumbs. Press the mixture into a springform pan lined with parchment paper and refrigerate. In a bowl over hot water, beat the egg yolks with the sugar until creamy. Stir in the buttermilk, the orange zest and the vanilla paste until creamy. Beat in a bowl over ice water. Mix in both yogurts and the coconut flakes. Whip the cream until stiff and carefully fold into the mixture. Spread the buttermilk and coconut cream on the crust and freeze for about 12 hours.

2.

Peel the kiwis and cut into thin slices. Coarsely crumble the remaining ladyfingers. Decorate the cake with the kiwi slices and the ladyfinger crumbs. Serve dusted with powdered sugar.

Eat immediately; kiwi combined with dairy products can quickly become bitter.
