- 750 grams King prawn (ready to cook peeled and deveined)
- ½ bunch Basil (finely chopped)
- 2 Tbsps Chile oil
- 1 splash white wine
- 2 egg yolks
- 180 milliliters olive oil
- 1 garlic clove (crushed)
- 2 Anchovy fillet (very finely chopped)
- lemon juice
- 4 Tbsps Parmesan (freshly grated)
- salt
- cayenne pepper
Preparation steps

For the mayonnaise, whisk egg yolks. Whisk in oil, drop by drop to begin with until emulsified. Then incorporate oil in a thin stream, whisking constantly, until creamy. Stir in anchovies, Parmesan and crushed garlic. Season with lemon juice, salt and cayenne pepper.

Rinse prawns and pat dry. Sauté prawns in hot chili oil. Deglaze with a little wine and simmer, turning occasionally until cooked through, 2-3 minutes. Finally, stir in basil and season with salt. Serve with anchovy mayonnaise.
