For the jelly
¼ cup caster sugar
red Food coloring
2 cups water (plus 120ml)
6 tsps Gelatin powder
For the whipped cream
cup whipping cream
2 Tbsps powdered sugar
pink Decorative sugar crystals (to garnish)
purple Decorative sugar crystals (to garnish)
For the cookies
cup plain flour
plain flour (for dusting)
1 Tbsp Corn starch
0.333 cup unsalted butter (cubed)
¼ cup powdered sugar
½ tsp salt
½ lemon (juiced)
edible, silver Bauble (to decorate)
pink Decorative sugar crystals (to decorate)
purple Decorative sugar crystals (to decorate)

Preparation steps

1.
Prepare the cookies by pulsing together the flour, cornflour, salt, icing sugar, lemon zest and butter in a food processor until it comes comes together to form a dough in the machine.
2.
Remove the dough, knead gently and form into a ball. Wrap in clingfilm and chill for 60 minutes.
3.
Meanwhile, prepare the jelly by combining 120ml of water with the sugar in a saucepan.
4.
Heat over a medium heat, swirling occasionally to help dissolve the sugar. Once the sugar has dissolved, continue to cook the syrup until slightly thickened.
5.
Remove from the heat. Sprinkle the powdered gelatine over a jug of 500 ml water. Leave for 5 minutes. Whisk well and then whisk into the warm syrup until the gelatine has dissolved.
6.
Add a few drops of food colouring and stir until you have a pink/red colour; it shouldn't be totally homogenous in appearance. Pour into serving glasses and chill.

Pre-heat the oven to 180°C | 350F | gas 4.
8.
Remove the cookie dough from the fridge and roll out on a lightly floured surface to 1cm thickness.
9.
Cut out shapes from the dough using a small star-shaped cookie cutter. Grease and line 2 baking trays.
10.
Arrange on the baking trays spaced apart then bake for 12-15 minutes until they just start to colour.

Remove from the oven and sprinkle with the sugar crystals and some dragee balls.

Allow them to cool on the sheets before transferring to a wire rack to cool completely.
13.
Once the jelly is set, whip the cream with the icing sugar in a mixing bowl until it forms soft peaks.
14.
Spoon on top of the set jelly and decorate with a sprinkle of the pink and purple sugar crystals. Serve the cookies alongside the jelly.
