- 3 cups Bread flour
- 1 sachet easy blend Yeast
- 1 tsp salt
- ⅛ cup olive oil
- 1 ½ cups warm water
- 1 cup Mozzarella (chopped)
- 8 Tomatoes (seeds removed and finely chopped)
- ¾ cup Parmesan (grated)
- 4 Tbsps chopped parsley
- 4 Tbsps chopped thyme

Preparation steps
1.
Mix the flour, yeast, salt, oil and water to make a dough. Turn it onto a floured board and knead for about five minutes until smooth and elastic.
2.
Return the dough to the bowl, cover with a clean tea towel and leave in a warm place for 1 1/2 hours or until doubled in size.
3.
Knead the dough again for five minutes then place in a clean bowl and leave to rise for another 30 minutes.
4.
Heat the oven to 200ºC (180º fan). Roll the dough into small balls, flatten them slightly and make a small indentation in the middle of each.
5.
Place them on a greased baking tray and place a piece of mozzarella in the indentations. Scatter over the tomatoes, Parmesan and parsley then bake for 8-10 minutes or until golden brown.
6.
Scatter over the thyme and serve.
