Jam Filled Star Cookies

Beat the butter, sugar, vanilla and salt in a mixing bowl until soft and creamy.
Gradually beat in the egg until blended.
Add the flour and mix to a soft dough. Wrap in cling film and chill for 30 minutes.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line 2 baking trays with non-stick baking paper.
Roll out the dough on a lightly floured surface to a thickness of 5mm|1/4".
Using a large star cookie cutter, cut out 30 star shapes and place them on the baking tray.
Using a small star cookie cutter, cut the centres from 15 of the star shapes. You can re-roll the cut-out dough to make a few more large or small stars. Chill again for 30 minutes.
Bake for 6-8 minutes until pale golden. Cool on the baking trays.
To decorate: heat the jam in a pan until melted. Spread 1 teaspoonful of jam evenly over the whole stars.
Lightly dust the hollow stars with icing sugar and place one on top of each of the jam filled stars.
Whisk the egg white lightly and brush a little over the remaining stars. Sprinkle with sparkling sugar and leave to dry.
