1 organic lemon (zest)
300 grams Pastry flour
100 grams sugar
1 pinch salt
1 egg
200 grams cold butter
200 grams Red currant jelly (or marmalade)

Preparation steps

1.

Mix the flour and lemon zest on a work surface. Form a well in the center. Pour the sugar, salt and egg into the well. Chop the butter into small pieces and distribute around the flour. Chop the ingredients and quickly knead into a smooth dough. Wrap the dough in plastic and chill for at least 1 hour.

Preheat the oven to 175°C (approximately 350°F). Line a baking sheet with parchment paper.

Roll the dough about 3 mm (approximately 1/4 inch) thick on a floured surface. Use cookie cutters to cut out matching shapes. Place the cookies on the baking sheet. Bake for 10-12 minutes.

Spread half of the cookies with jam and sandwich with another matching cookie.

5.

Serve sprinkled with powdered sugar, if desired.
