- 1 red onion
- 1 handful mixed Fresh herbs (such as parsley, chives, basil)
- 480 grams canned cannellini beans
- 280 grams Tuna (in oil)
- 100 grams sun-dried sun-dried tomatoes
- ½ lemon (juice)
- 4 Tbsps white balsamic vinegar
- salt
- freshly ground peppers
- sugar

Preparation steps

Peel the red onion and chop finely. Rinse the herbs, pat dry and chop finely. Drain the beans and the tuna, reserving about 3-4 tablespoons of the tuna oil.

Cut the sun-dried tomatoes into thin strips. Whisk the lemon juice with the vinegar and tuna oil. Season with salt, pepper and sugar. Combine the beans, tuna, onion, herbs and sun-dried tomatoes, drizzle with the dressing and mix well.
3.
Refrigerate for at least 30 minutes before serving.
