- 3 ¾ cups white Asparagus (peeled)
- 2 Tbsps vegetable oil
- 1 tsp powdered sugar
- dry white wine
- 1 Focaccia
- ⅓ cup cream cheese
- 2 balls Buffalo mozzarella (125 g | 0.5 cup each, sliced)
- 2 handfuls Arugula
- 1 handful Beet Greens
- 1 tsp lemon juice

Preparation steps

Lightly brown the asparagus in a frying pan in hot oil. Sprinkle with icing sugar and toss to coat. Season with salt and ground black pepper and deglaze with a splash of wine and a little water. Cover and braise for around 20 minutes until cooked. Remove the lid and cool to lukewarm.

Cut the bread in half horizontally and spread cream cheese over the bottom half. Top with the mozzarella and asparagus. Arrange the rocket and beetroot shoots on top. Drizzle with lemon juice, season lightly with salt and ground black pepper and replace the lid. Cut into 4 pieces and serve.
