- 4 cups Salmon fillet (cubed)
- 11 ozs firm, cooked Polenta (cubed)
- 1 cup dried, wakame Seaweed (torn)
- 3 Tbsps Avocado oil
- 4 wooden Skewer (soaked in water for 30 minutes)
- ½ cup Arugula
- 1 cup Bean sprout
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the grill to hot.
2.
Thread the salmon, polenta, and seaweed onto the skewers, alternating as necessary. Brush with oil and season with salt and pepper.
3.
Arrange on a grilling tray and grill for 6 - 8 minutes until the polenta and salmon are firm to the touch and pink.
4.
Serve with rocket and beansprouts as a garnish.
