- 4 rashers Bacon (chopped)
- 2 loaves Ciabatta
- 4 tsps Dijon mustard
- 2 Tbsps olive oil
- 4 large Tomatoes (sliced)
- 1 ¼ cups fresh Mozzarella (sliced)
- 4 Lettuce (torn)
- 12 Basil

Preparation steps
1.
Heat a dry frying pan and cook the chopped bacon until crisp.
2.
Slice the ciabatta loaves in half, spread the mustard over the cut surfaces of the bread and drizzle with the olive oil.
3.
Divide the bacon between the loaves then add the tomatoes, mozzarella and lettuce, seasoning as you go with salt and pepper. Top with the basil leaves, replace the lid and slice diagonally to serve.
