1 ½ Tbsps fresh rosemary (finely chopped)
½ cup cream cheese (at room temperature)
½ cup Goat cheese (crumbled)
1 Tbsp honey
2 small Pear (washed)
¼ cup fresh Parmesan (grated)
In addition
Parchment paper sheet (cut into squares to fit)

1 Skillet, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Coarse grater, 1 Sieve, 1 Citrus juicer, 1 Salad spinner

Preparation steps

Preheat oven to 375º F. Line the wells of a mini-muffin tin with parchment paper. Lightly coat with nonstick cooking spray.

Lay out 1 sheet of puff pastry, sprinkle with 1/2 of the rosemary. Using a rolling pin, gently press the rosemary into the pastry and roll into a 20 x 20-inch square. Cut pastry into 2 x 2-inch squares.

Press the puff pastry into the prepared tin.
4.
In a small bowl, combine the cream cheese, goat cheese and remaining rosemary. Set aside.

Chop the pears with the skins on, as this will add color.
6.
In a separate bowl, combine the honey, pears and Parmesan cheese.
7.
Spoon 1/2 tablespoon of the cheese mixture into the bottom of each tart. Top with 1 tablespoon of the pear mixture.
8.
Bake for about 20 minutes or until edges are golden brown. Cool for 10 minutes. Serve in parchment paper tied with kitchen twine if desired.
