- butter (for the tartlet dishes)
- 14 ozs frozen Puff pastry (defrosted)
- flour (for the work surface)
- 16 dried Figs (finely chopped)
- ½ cup mixed Nut (e. g. pine nuts, almonds, hazelnuts)
- ½ cup mixed Seed (e. g. pine nuts, almonds, hazelnuts)
- 4 Tbsps butter (chopped)
- 3 Tbsps Vanilla sugar
- ⅜ cup cream
- 1 tsp powdered sugar
- 5 Tbsps sugar
Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease 8 tartlet dishes
2.
Roll out the pastry on a floured work surface and cut out circles approx. 10 cm in diameter.

Place the circles in the prepared tartlet dishes and press firmly around the edges.

Mix together the figs and the nuts and place in the tartlets. Cover with the chopped butter, sprinkle with the vanilla sugar and bake for 15-20 min.

Remove from the oven, leave to cool and then remove from the dishes.

Mix together the cream and the icing sugar and place a dollop onto each tartlet.

To make the caramel sauce, heat the sugar in a pan. Only stir when the sugar starts to melt at the edges then stir continuously but slowly until it has fully dissolved. Add 5 tbsp water and drizzle the sauce over the tartlets. Serve immediately.
