Ingredients

For the dough
2 cups flour
1 pinch salt
½ cup sugar
cup butter
2 egg yolks
flour (for the work surface)
additional butter (for the pan)
For the filling
10 cups ripe Apple (peeled, cored, and sliced)
1 organic lemon (juice)
cup brown sugar
½ cup butter
cup Calvados
0.333 cup raisins
½ Tbsp cinnamon
¾ cup coarsely chopped Walnut

Preparation steps

1.
Mix together the flour, salt and sugar on a work surface. Make a well in the centre.

Drop flakes of butter around the well. Place the egg yolks in the well. Using a sharp knife, cut the butter and egg into the flour mixture until the texture resembles coarse cornmeal. Use your hands to form into a smooth dough. Shape into a ball. Wrap in clingfilm and refrigerate for 30 minutes.

Preheat the oven to 200°C | 400F | gas 6. Grease the tart pan.

Roll the dough out on a floured work surface to fit the pan. Place the dough in the pan. Use a fork to prick the dough in several places.

Place half of the apples in a bowl with some water and half of the lemon juice.

Place the other half of the apples with 100 g of sugar, 75 g of butter and the Calvados in a pan and simmer gently for 10 minutes stirring occasionally. Puree, using a stick blender. Remove the apple sauce from the heat.

Soften the raisins in warm water for about 5 minutes.

Remove the apple slices from the water and heat briefly in a pan with the remaining lemon juice, sugar and butter and the cinnamon. Allow to cool. The slices should not get too soft!
9.
Spread the apple sauce on the dough and lay the apple slices in a fan-shaped design on top. Bake in the preheated oven for 25 minutes until golden brown. 5 minutes before the end of the baking time, sprinkle the walnuts and raisins over the top. Remove the tart from the oven and allow to cool in the pan. Serve on a cake plate.
