½ cup butter
1 cup sugar
½ cup light brown sugar
2 eggs
¼ cup Buttermilk
1 tsp vanilla extract
3 ½ cups all-purpose flour (plus extra for dusting)
½ tsp salt
½ tsp baking soda
18 ozs canned cherry pie filling (or cherry preserves)

Preparation steps

1.
Beat together the butter and sugars in a mixing bowl until light.
2.
Add the eggs, buttermilk and vanilla and mix well.
3.
Sift in the flour, salt and bicarbonate of soda and mix well. Cover and chill for 1 hour until firm.
4.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line 2 baking trays with non-stick baking paper.
5.
Divide the dough in half.
6.
Roll out each half thinly on a floured surface. Cut out rounds with a 7cm|3"cutter.
7.
Place half of the rounds 5cm|2" apart on the baking trays. Top each with a heaped teaspoon of pie filling.
8.
Cut a cross in the centre of the remaining rounds and place over the filled rounds. Seal the edges, pressing with the tines of a fork.
9.
Bake for 10-12 minutes, until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
