3 ½ ozs Milk chocolate couveture
3 ½ ozs Dark couverture chocolate
7 ozs butter
6 eggs
3 ½ ozs sugar
3 ½ ozs Pastry flour

Preparation steps

1.

Preheat the oven to 400°F.

Melt both chocolates with the butter over a water bath. Beat the eggs with the sugar until frothy. Slowly fold in the chocolate-butter mixture and then stir in the flour.

Line 4 small ramekins approximately 4" in diameter each with parchment paper. Fill with the chocolate mixture and bake for about 7 minutes. The cakes are done when a slight crust starts to form on the top, but still feels very soft to the touch (careful - they are hot!).

Allow the chocolate cakes to cool briefly and remove them from the ramekins. Serve immediately.
