Individual Chocolate Cakes
Several studies have shown that dark chocolate, thanks to the many flavonoids contained in cocoa, reduces the risk of harmful deposits in the blood vessels and can also lower cholesterol levels. Therefore, you can treat yourself to a small chocolate cake for dessert from time to time without regret.
If you like dark chocolate, you can make the little chocolate cakes from 200 grams of dark chocolate couverture. Fresh berries, such as raspberries, are a perfect match.

Preheat the oven to 400°F.
Melt both chocolates with the butter over a water bath. Beat the eggs with the sugar until frothy. Slowly fold in the chocolate-butter mixture and then stir in the flour.
Line 4 small ramekins approximately 4" in diameter each with parchment paper. Fill with the chocolate mixture and bake for about 7 minutes. The cakes are done when a slight crust starts to form on the top, but still feels very soft to the touch (careful - they are hot!).
Allow the chocolate cakes to cool briefly and remove them from the ramekins. Serve immediately.
