5 cups lean lamb (from the bone, diced)
1 walnut-sized ginger (finely chopped)
1 tsp Cardamom (slightly crushed)
1 tsp Garam Masala
½ tsp ground cloves
1 dried chili pepper
2 Tbsps Ghee (or clarified butter or vegetable oil)
2 Tbsps flour
2 onions (chopped)
1 ⅔ cups Meat stock
¼ cup cream (30% fat)
cup natural Yogurt (at least 3.5% fat)

Preparation steps

1.
Mix the lamb with the ginger, cardamom pods, garam masala, ground cloves and dried chili pepper. Allow to rest for at least 15 minutes

Heat the ghee in a large skillet. Mix the marinated meat with the flour and fry in the hot fat on a medium heat. Season with salt.
3.
Add the onions and sweat for 2 minutes. Stir in the stock and, stirring continuously, bring to a boil. Stirring occasionally, allow the curry to stew on a low heat for 30 minutes with a lid on.
4.
Add the cream and stew for a further 30 minutes with a lid on. Just before serving stir in the yogurt and season with salt.
